It’s been one week since we launched Edge Ranges! Yet, it’s been longer than a week for Paul Caira from The Central Café in Cupar. We introduced Paul to Edge Ranges a little while ago, and we’re proud to say he was our first-ever Edge customer. Paul had his Edge Counter Range installed in December 2020, so has a few months of experience with the range under his belt.
 
We took the time to chat with Paul and find out more about him and his business, as well as his experience with Edge so far.
 

Starting in Fish & Chips

Paul first entered the industry as a young child, with his family running fish and chip businesses, it was natural that he joined them in this line of work. Going back many years, his grandfather even had experience using old, traditional coal frying ranges! Whilst Paul did venture away from Fish & Chips for a short period, he returned to start his own shop in Cupar 32 years ago and hasn’t looked back since!

Time for a refurbishment…

The previous owners of the Cupar establishment had purchased a new 3 pan frying range in 1982. When Paul took over, he used the same frying range from 1989, and had been using that same range right up until the refurbishment in 2020! Years of experience using old-style frying ranges have benefitted Paul as he knows exactly how to work a range and maximise the output. Paul considered doing a refurbishment for a few years then COVID-19 ended up providing an opportunity to do this. Paul was able to arrange the refurbishment without too much disruption to the business, as customers were not entering the premises at this point anyway. Paul wanted to invest in The Central Café to ensure it is a nice, welcoming place for his customers to be, giving them confidence in him and his business. His refurbishment included changes that are now more pleasing to the eye, and of course, a brand-new frying range.

Choosing a frying range

When it came to choosing a new frying range, Paul considered all his options with the different manufacturers within the market. In the end, Paul chose to go with Edge for a few reasons. Paul talked about how he appreciated the Edge pitch, he wanted a High-Efficiency range that does what it says on the tin. Edge ticked all the boxes and comes with Halo Lighting and Built-in Filtration as standard! Another reason Paul wanted to choose us was for Florigo’s reputation. By reading and watching customer testimonials from genuine people, it gave him confidence in doing business with us. Paul sat with Robert Furey (Florigo MD) to discuss what he wanted to get out of his range. He decided on a 2-pan Edge instead of replacing it with 3 pans like his current British range. This is because the Edge has High-Efficiency pans with a far superior recovery time allowing Paul to double his output despite being a pan down! As well as the savings in energy, the Dutch High-Efficiency technology provides many benefits to his business. Since his range installation, Paul has appreciated the quick, straightforward support from the Florigo Service Team. We were able to learn a lot from our first Edge install that we can use to continue improving for future Edge customers.

A well-established business with a hopeful future

After serving Fish & Chips to his community for over 30 years, Paul has a very good understanding of his customer base and where the market is heading. Paul introduced his own website with collection and delivery services a few years ago and has seen the demand increase. Paul has been able to stay ahead of the curve. He achieves this by beating competitors on price and quality, alongside providing an excellent service to his customers which keeps them coming back for more every time! One of The Central Cafes favourite accomplishments was winning the Scottish Business Awards for Best Fish & Chips in 2018. With a thorough judging process, this was a great feeling for all of the team to win against other great businesses. Paul hopes to keep providing the best service and quality he can for his customers and looks forward to the future of The Central Café in Cupar!
